Ottimo at ITC Gardenia has been known for serving one of the best Italian menu in the city. The “Cucina Italiana” at Bangalore’s premium hotel property is hosting a one of its kind “Risotto Fest” to celebrate the soul food of northern Italy. As many of us are aware that the during the middle ages, Arabs introduced rice to the Italy and Spain. And later the Milanese adopted it as their staple food during the Spanish rule and rest is history.The slow-cooked local rice with emphasizing the rich flavors and the locals spices particularly saffron were used to create now legendary ‘Risotto alla Milanese’.

“Ottimo gives its guests the opportunity to indulge in this Italian staple while making them experience both the classic and the adventurous appeal of a Risotto” according to the Executive Chef Yogen Dutta of ITC Gardenia.

The special menu has been curated by Master Chef Vittorio Greco and includes the risotto delicacies from three northern provinces of Italy, namely Lombardia ,Piedmont and Veneto. I was invited with few well known food connoisseurs to taste some select dishes along with the masterclass at Ottimo.

During the masterclass Chef Zohair, Junior Sous Chef at Ottimo demonstrated two from the menu.First was the vegetarian preparation with Jerusalem artichoke, sage butter and parmigiano, Risotto Con Topinambur Salvia E Parmigiano which was followed by Risotto Al Frutti Di Mare Con Morbidoni Di Calamari  , Black ink risotto with seafood and squid dumpling.During this session, he enlightened us with the importance of ingredients ,the detailed cooking method and kitchen secrets of making a perfect Risotto that would  leave a lasting impression in every guest’s palate.

Our Risotto sojourn began with Porcini Mushroom risotto, Risotto Al Funghi Porcini. This classical first course autumn recipe from the region of Peidmont has tasty and aromatic flavor of the king of mushrooms, porcini and grana padano cheese.

It was followed by the Saffron Risotto with Lamb shank, marrow crumble and Lemon Gremolata. This Lombardia specialty is a classical Milanese Risotto recipe that is rich with melted bone marrow with saffron fragrance.

After serving the Porcini Mushroom risotto to all ,our vegetarian friends were served Roasted Bellpepper with Gorgonzola Risotto followed by the Green Asparagus & Sun-dried Tomato Risotto.

Before I share my dessert experience here ,let me share glimpses of the beautiful and elegant Ottimo at ITC Gardenia ,which has won Times Food Award for Best Italian two years in a row 2015 & 2016.

Finally our Italian gastronomical experience ended with two sumptuous desserts, Banana Gelato with caramel sauce and Torta caprese

For me ,any Italian meal is incomplete without the Tiramisu.Therefore I requested the Chef to serve us a helping of the coffee-flavored Italian custard dessert too. Chef Zohair also demonstrated us the Tiramisu preparation.

Our meal was accompanied by the Chardonay and Cabernet Shiraz from the australian Jacob’s Creek and sparkling water from Veen.

The festival has already started and is on till next Sunday, February 19th , 2017.
