“Indian Culinary Route” by Marriot Bangalore is being held at whitefield between 7 – 13 September ,2015 and it provided a wonderful opportunity to meet 12 select master-chefs from various Marriotts across India and taste their delectable creations in Bangalore.Set at the M Café , multi cuisine restaurant located on the lobby level at Marriot whitefield , the whole environment was magnificently electric.
I was honoured to be part of few distinguished food bloggers invited to this event for two days.Day One was a cookout contest between 4 teams of food bloggers and headed by the Masterchefs from Kerala , Goa , Hyderabad & Rajasthan who guided their teams. Judged by Master Food Connoisseur Suresh Hinduja , I was part of the winning team of Master Chef Saji from Marriott Kochi that prepared the Kerala Chicken Roast. The other teams prepared the Gatta Curry (Rajasthan) , Biryani (Hyderabad) and Prawn curry (Goa).
During the festival ,I met the Executive Chef of Bengaluru Marriott Hotel Whitefield , Raheel Ahmed who has been associated with this property since it was opened in January 2013.He briefed us about the whole idea about the Indian Culinary Route.The festival showcased some of the best regional food from India including Rajasthani , Punjabi , Goan , Maharastrian , Gujrati , Tamil , Kerali , Mangalorean , Gharwali,Delhi , Hyderabadi and Awadhi cuisines.
During the conversation, I came to know that the Chef has a rich and diverse European and Asian cuisine.experience. Earlier, he was associated with Marriott Hotel at my hometown Jaipur as an Executive Chef. Like me, he also did his hotel management from Institute of Hotel Management (IHM).
Day Two was the relish the entire cuisines.It was a delightful moment for me to meet the Chef Shanavaz Qureshi from JW Marriott Mumbai,Chef Deepak Rana from JW Marriott Mussorie, Chef Madhusudan from Marriott Hyderabad, Chef Selester from Marriott Goa ,Chef Saji from Marriott Kochi,Chef Mitesh Saraiya from Courtyard by Marriott Ahmedabad, Chef Dinesh from JW Marriott Chandigarh, Chef Rohit Yadav from JW Marriott Delhi, Chef Ranjit from Marriott Jaipur, Chef Prashant Suryavanshi from Courtyard by Marriott, Hinjewadi, Chef Thirumal from Bengaluru Marriott Whitefield, and Chef Satish Reddy from Courtyard by Marriott Chennai.
This Marriott festival for me was the like a once in a life time Kumbh Mela of culinary extravaganza with wide array of delectable vegetarian and non vegetarian dishes ready to be savored.
I absolutely enjoyed the setting of the road side kiosks and stalls with master-chefs at helm to serve you freshly prepared dishes from some of the featured states of India while talking about their cuisine. Among the dishes being served at Goan kiosk , I chose to eat the the Goan spicy beef curry with pav bread.The biryani from the Hyderabadi stall was among my favorites here too.The Mangalorean curry with fresh sannas were absolute divine
The indoor area of M cafe served the coastal cuisines of Karnataka , God’s own country Kerala , Chettinad delights from Tamil nadu and the rare to find Gharwali cuisine from the hills of Uttrakhand.
I never had such delicious phahdi style teetar curry from gharwal region of Uttrakhand which was prepared delicately flavor cooked.
For those who love to relish indian coolers and drinks , there was lot to offer but I opted for my childhood favourite Aam Panna ( raw mango summer drink) to quench my thirst.
From the Tamil Nadu counter , the pleasant surprise was the Chicken and Egg Paniyaram. Extremely delicious and flavorful , this non vegetarian variation was a instant hit among all of us. The Kerala Kozhi roast as always was too good to resist for me.
Being a true native of Rajasthan , the Laal Maas and Ker sangri provided me the solace of homely comfort food.You must try these when you visit this celebration of food. The chats from Delhi reminded me of my maternal memories from the old delhi.
